Fish is a tasty winter delicacy: many species make the most of winter to accumulate energy before the breeding season. For example, prawns caught between February and March taste much better than those caught in September.
If you’re thinking of shellfish, choose Novebolle Brut: the driest and most aromatic version of Romagna Spumante. Start with the most famous entrée: raw seafood. You can continue with oysters, or maybe shellfish Made in Italy. Prawns from Mazara del Vallo (buy them fresh), tuna or amberjack tartare, marinated raw anchovies (with just a bit of oil, salt, pepper, lemon and herbs). Among the specialties of the Romagna coast we must mention fish broth, mussels from Marina di Ravenna or fried fish, caught from the Adriatic Sea.
